Mikelle's Chia Pudding Recipe!



Holiday Chia Pudding

Yield 1 1/4 cups
1/4 cup chia seeds
1/4 cup dried coconut, shredded & unsweetened
1 cup water
1/4 cup raw cashews (soaked 1 hour, drained and rinsed)
4 soft medjool dates, pitted
2 cloves
1 teaspoon lucuma powder
1/2 teaspoon powdered ginger
1/4 teaspoon vanilla extract
1/8 teaspoon cinnamon
Place the chia seeds and coconut in a small bowl, briefly stir to mix, and set aside. Blend the remaining ingredients until smooth. Pour the blended cashew mixture into the bowl with the chia seeds and coconut and stir. Wait a few minutes and stir again. (You’ll notice the chia seeds beginning to take on a gelatinous texture.) Wait a few minutes, again, and stir. Do the “wait and stir” once more, and then place the Holiday Chia Pudding in the refrigerator for about 15 - 20 minutes (or longer, if desired). Then, enjoy.

***TROPICAL CHIA PUDDING FOR POTLUCK - quadruple recipe; omit cloves, ginger, vanilla, cinammon; add 1/4 banana, 2 mangoes, agave to taste; blended in small batches before serving for optimal texture
***this recipe can be made a billion yummy ways. chocolate and banana is my next project. blueberry too!

  1. mmmm....chia pudding. i just can't seem to get enough of this stuff. chia is so versatile and so easy to work with. it is super nutritious and very filling as well. i have been experimenting with a chocolate banana pudding. here is what i have come up with. note that the key is blending the final product until very creamy. this takes some time and your blender might give you a dirty look but it is worth it. (vita-mix owners rejoice!)

    mix in bowl:
    1/4 cup chia seeds
    1/4 cup dried coconut, shredded and unsweetened

    blend:
    1 cup water
    2 T cashews
    2 T nut milk (or more cashews if you prefer)
    1 heaping T cocoa powder (add more if you want - no need to skimp on the chocolate, right?)
    3 or 4 dates
    1 small banana
    sweetener of choice, to taste (i use stevia. lucuma would be good too)

    add blended mixture to bowl of chia and coconut. mix well. wait a few minutes and stir well. the chia will start to expand. wait again mix again. put in fridge for 20 minutes and mix again. start blending in small batches, adding water or nut milk as needed. blend until very creamy. this recipe invites variations and experimentation. i would love to get some new ideas.
